We teased you with a brief mention of this south-western gem in last week’s Spring Openings listings. As we said last week, we rarely venture to Parsons Green; that will no longer be the case. Bistrò by Shot is a trifecta. The restaurant makes use of top quality beans, baristas and machines from sister bar, Shot Espresso as well as utilising the expertise of neighbouring Vagabond wines, whose guest sommeliers hand-select wine from a superb but manageable list. The food marries traditional Italian and French cuisine seamlessly. Dishes range from daring (cucumber cannelloni of cornish crab, avocado mousse and soy gel) to classic and indulgent (confit duck leg or chateaubriand), all the while retaining all the qualities of a genuine neighbourhood eatery. In a restaurant scene increasingly dominated by concept restaurants with an eye to sweeping expansion, this is a welcome return to a more continental model, a place where the waiter might even learn your name after a couple of visits; they’ll certainly be learning ours.
