We’re not super excited about promoting chains here on le cool London, but we had to make an exception for this one as it’s a cool idea and we genuinely have a hard time turning away any sort of noodle. The name does kinda give it away… Noodle Lab is a new testing kitchen from the omnipresent Asian fusion eatery. Based on the Japanese concept of ‘kaizen’ or ‘good change’ – it gives Londoners the opportunity to try out and then feedback on new recipe ideas determining whether they will be scaled out across the country. The menu changes each month (though it will always feature mainstays like chicken katsu curry) as the chefs have a go at experimenting with new flavours, ingredients and techniques. There is definitely a focus on developing vegan and vegetarian dishes here as part of the company’s wider commitment to plant-based diets. We enjoyed our vegatsu (seitan katsu) and tantanmen pork ramen, but we can’t promise they’ll still be on the menu so you’ll have to pop in and check it out for yourself.
