OK, so macaroons aren’t exactly ‘lecool’. But what if I told you that there is a bad boy of the macaroon world? A goldenballs gone wild. The Macauley Culkin of French baking. Pierre Hermé comes from a long line of Alsatian bakers, working with Gaston Lenôtre from the age of 14. He’s done Fauchon. He took over at Ladurée and then he got bored. Hermé now owns his own bakeries in Paris, Tokyo and London. And he can put whatever the hell he likes in his baked creations. He teams olive oil with vanilla; strawberry with balsamic vinegar. His passion fruit and chocolate macaroon is etched in my memory as the tastiest morsel of food that has ever passed my lips.
