If you are looking for noodle Nirvana, Tonkotsu on Dean Street can take you there. This Japanese eatery focuses on the soul-warming noodle soup that is as much about the broth as it is about the fresh noodles and deeply flavourful toppings. Tonkotsu itself is a particular type of ramen – whose creamy broth is the result of cooking pork bones and fat for as long as 18 hours (there are vegetarian options too, not to worry). The sesame spinach and bean sprouts salad is ideally paired with the Ginger Pig pork topped Tokyo Spicy soup.
