I’m writing about Trullo because there’s no denying it’s captured my taste buds and mind with a certain dish that’s served off their menu. That’s not to say the rest of their wares aren’t worth talking about. Their lamb shoulder, slow cooked till it achieves that fantastic thread-like texture is heavenly; also amazing is their salt cod bruschetta with spinach and egg, small yet packs a punch. But really it’s all about the pappradelle with beef shin ragu. Even typing those words makes me salivate wildly, like some caged dog waiting for the hunt. If I could live on this stuff all day, every day, I would, but then I’d probably be the size of a house and not be able to make it back into the restaurant. Its richness matched by the tenderness of the beef shin makes it world class in my opinion and more than a good excuse to check out this fine restaurant. / Firas Waez
