We all know about Ruby’s – it’s been one of Dalston’s top cocktail destinations for years – founded by Tom Gibson back in 2012 in a former Chinese takeaway shop. And now, in a quiet expansion, he’s taken over the adjoined space to launch Ruby’s Bar & Lounge – a somewhat more chilled out, less refined, younger sibling. This is clever, because it leaves a successful formula intact, but also because by introducing beer, wine, food and live entertainment right next door you will have absolutely no reason to ever leave. The food is brought by the Hanoi Kitchen – streetfoody, kind of – small plates vibes. The pork bahn mi we tried was epic.
