We opt for seasonal Autumn Leaves, complementing the installation we were impressed by on our way in – a floor to ceiling display of fiery red and burnt orange foliage. First-up is warming miso soup, followed by a quartet of starters. The highlight? Spheres of truffled rice in a crisp coating. For main, don’t miss the charred yet tender chicken thigh and a generous hunk of opaque salmon with miso puree for that umami hit. A Japanese offering wouldn’t be complete without sushi; we greedily gobble flavourful wagyu beef maki. Yet the best is still to come: wafer thin nutty feuilletine and super light hazelnut parfait encase a silky smooth chocolate liquid centre; a showstopper of a dessert.
